Originating from China and introduced to Japan, sushi has been transformed into a remarkable dining experience. Sushi in China flourished primarily from the 7th to the 13th century when the relationship between fish and rice gradually disappeared. In Japan, however, sushi has evolved slowly and continues to become more and more popular over the years by changing to adapt to tastes and geography.

The earliest manifestation of sushi in Japan was a funa (crucian carp) dish which has evolved into the delightful sushi we enjoy today, known as Nigirizushi. In this sushi, a select portion of seafood and wasabi (Japanese horseradish) is placed on a pat of seasoned rice. Quickly prepared and beautiful to the eye, sushi is a healthy dining choice. Sushi is a long-standing traditional cuisine that will move us into the future.
